Food, Beach, Cats and More!

Well....seems like a little while since I last posted. I guess it's about time to post again! So, since you last heard, our cement pad did get poured but....well, I'll just leave it at that. On March 25th we took a trip out to San Pedro, one of Belize's islands (cayes). We had an offer a month and a bit ago to rent a small space there and set up a Shoots Alive store front there, so we decided to check it out for the 3rd time. We spent a few hours chatting with the land lord and walking around the space, then we of coarse had to stop for some ice cream, because it was Grady's birthday and because it is impossible to walk past an ice cream shop and not go in. We splashed in the sea a bit and before we knew it, we were on the last boat of the day heading back to the mainland.  So, after talking, taking trips and praying, we have just recently come to the conclusion that we will be going ahead with the store front! Mom, Grady, Keaton and I will be living out there ...

London Fog

Surprisingly enough, Belize does get some cool (low 70Fs!) spells, and this morning happens to be one of those times. What else helps to bring up your body temperature but a steaming hot.....London Fog! This recipe uses the traditional Earl Grey Tea, but with some added mint leaves to give just the right flavour, as well as some other (not so secret) ingredients to add to the frothiness!            

Buff Burgers

Buff Burgers. Short for Buffalo Burgers. Made with Water Buffalo meat rather than beef.    Craving a McDonalds or Burger King Burger? If you're like me, you can't stand those, and these Buff Burgers are a great alternative, especially with New York Style Potato Fries. These are delicious on homemade sourdough buns with soft cheese, lettuce, micro greens and tomato.   This recipe uses Coconut pulp. What's coconut pulp? Take some fresh coconut (if available), blend with water, squeeze through cheesecloth and voila! what's left in the cheesecloth is coconut pulp! Pretty much shredded coconut without the coconut flavour, or any flavour at all. It works as a great filler for burgers, buff or beef! Oh, and by the way, the liquid you squeeze out of the cheesecloth is coconut milk, homemade.
